Sometimes Bain Marie, from the French for 'Mary's bath'.


From the medieval Latin, and also called a double boiler, it is the name given to a kind of double cooker habitually used by alchemists.


The apparatus is said to be an invention of Mary the Jewess, an ancient alchemist traditionally believed to have been Miriam, a sister of Moses. The inner pan is gently warmed by the water in the outer pan, which is the only part in direct contact with the flames.


 It is generally thought that the name Balneum Mariae is derived from the gentleness of the heat, but it is more likely that the word is resultant from the image of a source of spiritual heat (that is, Jesus) being nourished by water (Mary).
